Meals for the dorm dwelling chefs
With communal showers, loud neighbors and dirty laundry also comes dorm food. Meal plans are great and all, unless you have multiple food allergies, are in a time crunch or just simply want a homemade meal. There’s something truly therapeutic about being able to prepare yourself a rejuvenating meal. We all know that’s a bit trickier to accomplish when you're living in under 228 square feet, but here are some recipes that don’t require a kitchen or a lot of preparation and are just as tasty as any other home cooked meal.
Overnight oats: This is the perfect grab n’ go meal especially if you’re the type of person to hit snooze one too many times. It leaves you energized and full of your daily dose of fiber.
Ingredients:
1/2 cup oats
1/2 cup milk of choice (I prefer oat milk)
1 tbsp chia seeds
1/2 tsp cinnamon
1 tbsp maple syrup
Combine all ingredients in an airtight container and refrigerate overnight. Pair with fresh fruit, peanut butter or granola.
Smoothie Bowl: What’s more refreshing than a cold treat? Especially with this 90° weather we’ve been having. This smoothie bowl not only covers your fruit and veggies for the day but also adds some protein to your meal. It’s a great pick me up — and the more toppings you add the better it gets.
Ingredients:
1 banana
1 cup spinach
1 cup frozen blueberries
1 tbsp peanut butter
1/2 cup milk of choice (I prefer oat milk)
Toppings:
Granola
Chopped strawberries
Chopped bananas
Hemp seeds
Combine all ingredients in a blender then add toppings of choice.
Chickpea salad: This vegetable packed meal takes a fun twist on chicken salad. Instead of chicken, use garbanzo beans as the protein for a nice vegetarian option and to keep the prep work to a minimum.
Ingredients:
1 can garbanzo beans
½ cup chopped celery
2 tbsp yellow onion diced
1 tbsp mayo
1 tsp dijon
1 tsp lemon juice
¼ tsp dill
Salt and pepper to taste
Drain and rinse garbanzo beans then add all ingredients in a mixing bowl. Pair with bread or a lettuce wrap
Veggie wrap: The best thing about wraps is getting a good proportion of every ingredient in every bite. This veggie packed wrap has the perfect amount of crisp and flavor from your desired hummus. If you are looking for a more fulfilling meal you can add turkey or cheese.
Ingredients:
Tortillas
Sliced cucumber
Sliced radish
Sliced carrots
Avocado
Hummus of choice
Sea salt
Spread hummus on tortilla then add sliced vegetables, avocado and a sprinkle of salt. Roll the tortilla up and voilà.
